No Bake Banana Bread Energy Balls

If you’re looking for a quick healthy breakfast or snack, try these filling yet flavorful no bake banana bread energy balls with dates, nuts, banana, oats and tossed in unsweetened shredded coconut. They can also be customized to be vegan or GF!

“Breakfast Truffles” or Banana Bread Energy Bites

Think of these energy balls as banana bread breakfast truffles, except they’re much more nutritious. Combining nuts, dates, and oats, these balls are soft and flavorful with a subtle hint of banana bread flavor from the banana and cinnamon. They come together in minutes and can be kept in an airtight container in the fridge for up to a week. If you’re looking to change up your breakfast or snack routine, then these no bake banana bread energy balls are a must try!

Ingredients:

You can play around with the ingredients, just make sure that in the end you have a sticky, dough-like texture after blitzing everything. Skipping out on dates or on honey may result in a crumblier texture. Here’s what I use:

Banana: One medium-sized banana, which results in about 8-10 energy balls.

Oats: I’ve used GF and regular oats in this recipe and both work really well.

Nuts: I use a combo of cashews and pecans but feel free to sub in the nuts you like. You’ll want to have about 3/4 cup total of nuts for one batch.

Shredded Unsweetened Coconut: Optional, but I love adding some coconut flavor to the energy balls and also coating them in it to give them a nice look.

Dates: These help bind the energy balls and gives them a nice soft and chewy texture. You can play around with the amounts here, but I generally use 3-4 dates per batch.

Ground flax seed: This is optional but I like to add ground flax seed to energy balls as well as to smoothies for a little more fiber.

Honey: I use a small amount of honey here to help bind the energy balls, but you can skip this step and add another date or you can sub in maple syrup to make them vegan.

If you're looking for a quick breakfast or a snack, try these filling yet flavorful banana bread energy bites full of dates, nuts, and oats.

Equipment

  • 1 food processor

Ingredients
  

  • 1 banana
  • ¼ cup shredded unsweetened coconut
  • ¾ cup oats (regular or GF)
  • ¼ cup cashews
  • ½ cup pecans
  • 1 tbsp ground flax seed (optional)
  • 4-5 dates, pits removed
  • 1 tsp cinnamon
  • 1-2 tbsp honey
  • 1 pinch salt

Instructions
 

  • Blend all ingredients in a food processor until a dough starts to form (around 1-2 minutes).
  • Using your hands or a 1 tbsp spoon, scoop out mixture and form into balls in between your hands.
  • Roll in some coconut shreds for an optional topping.
  • Enjoy as they are or refrigerate them in an airtight container for 3-4 days.
