No Bake Banana Bread Energy Balls

If you're looking for a quick breakfast or a snack, try these filling yet flavorful banana bread energy bites full of dates, nuts, and oats.

Equipment

  • 1 food processor

Ingredients
  

  • 1 banana
  • ¼ cup shredded unsweetened coconut
  • ¾ cup oats (regular or GF)
  • ¼ cup cashews
  • ½ cup pecans
  • 1 tbsp ground flax seed (optional)
  • 4-5 dates, pits removed
  • 1 tsp cinnamon
  • 1-2 tbsp honey
  • 1 pinch salt

Instructions
 

  • Blend all ingredients in a food processor until a dough starts to form (around 1-2 minutes).
  • Using your hands or a 1 tbsp spoon, scoop out mixture and form into balls in between your hands.
  • Roll in some coconut shreds for an optional topping.
  • Enjoy as they are or refrigerate them in an airtight container for 3-4 days.
