No Bake Banana Bread Energy Balls
If you're looking for a quick breakfast or a snack, try these filling yet flavorful banana bread energy bites full of dates, nuts, and oats.

- 1 banana
- ¼ cup shredded unsweetened coconut
- ¾ cup oats (regular or GF)
- ¼ cup cashews
- ½ cup pecans
- 1 tbsp ground flax seed (optional)
- 4-5 dates, pits removed
- 1 tsp cinnamon
- 1-2 tbsp honey
- 1 pinch salt
Blend all ingredients in a food processor until a dough starts to form (around 1-2 minutes).
Using your hands or a 1 tbsp spoon, scoop out mixture and form into balls in between your hands.
Roll in some coconut shreds for an optional topping.
Enjoy as they are or refrigerate them in an airtight container for 3-4 days.
