Vibrantly pink and made with just a handful of ingredients (including a serving of veggies!), this refreshing strawberry cauliflower smoothie is the perfect quick breakfast!

Smoothie Base
As with virtually all smoothies, the proportions and ingredients are pretty versatile so feel free to sub in whatever ingredients you like. The ingredients below are what I use for this particular smoothie but you can also add other veggies like spinach (just know that the color will change to a muddy grey when adding leafy greens).
- Strawberries– fresh or frozen
- Cauliflower– I usually add spinach to my smoothies, but sometimes if I’m craving a summery, vibrantly pink smoothie, I’ll use cauliflower instead. I’ve found that riced frozen cauliflower works best here.
- Frozen banana– I make smoothies fairly often so I like to keep frozen bananas on hand to help thicken the smoothie without having to add more water in the form of ice. To make sure I have frozen bananas on hand during the week, I’ll usually peel a couple of bananas on Sunday and put them in the freezer in a freezer-safe bag (my favorite are these Stasher bags that are reusable). But if you don’t have a frozen banana on hand, just add a quarter cup of ice cubes– the smoothie will still be delicious!
- Yogurt– I like to use Greek yogurt but any yogurt will do (as will any dairy-free yogurt!)
- Milk– You can opt for water here, but I like to add whatever milk I have on hand (nut milks or oat milk work great here, too)
Building a Smoothie Bowl

Smoothie bowls may have reached their peak trendiness a few years ago, but I still love making them. They are surprisingly quick to make and are not only refreshing, but filling. Start by pouring your smoothie in a bowl, then add your toppings. The sky’s the limit in terms of toppings, but some that I always use include:
- granola (see my granola recipe!)
- seeds: pumpkin, sesame, sunflower, etc.
- sliced fruit: strawberries, bananas, blueberries, etc.
- dried fruit: sliced dried figs, dried cherries, etc.
- nuts: chopped almonds, pecans, walnuts, etc.
- coconut: shredded, flaked or strips just make sure you’re getting unsweetened coconut

Strawberry Cauliflower Smoothie Bowl
Equipment
- 1 blender
Ingredients
- 1 cup strawberries, frozen or fresh
- ½ cup frozen riced cauliflower
- 1 frozen banana (if not frozen, add 3-4 ice cubes)
- ¼ cup yogurt
- ¼ cup milk (or dairy-free milk)
- 1 tsp vanilla extract (optional)
Bowl Toppings (optional)
- ½ cup granola (see my date syrup granola recipe)
- 1 tbsp seeds (sesame, pumpkin, sunflower, etc.)
- ½ cup sliced fruit (bananas, strawberries, etc.)
- ¼ cup chopped nuts
Instructions
- To the blender, add all smoothie ingredients and blend until combined and creamy.
- Pour into bowl and top with any smoothie toppings you like!
