An elegant and simple marbled vanilla bundt cake that tastes just like a matcha latte in cake form!
I’m not a coffee drinker, but I do love tea. Green tea, to be precise. Unsweetened green tea, to be even more precise. A close second to green tea is matcha. I do love a good matcha latte, but I always hesitate to order it at coffee shops for fear that it’s too sweet (sidetone: why do so many places have pre-sweetened matcha powders?). This pet peeve of mine is what I had in mind when I thought of this cake. If you like a very subtle matcha taste that’s not overly sweet, this the marbled matcha latte bundt cake for you. Outside of the matcha powder, it requires no special ingredients.

Tips:
Marbling
- I used a 1/4 cup measuring cup to scoop the batter in to the pan. If you only have one or don’t have a measuring cup, you can use a large spoon to scoop roughly 1/4 cup of the batter. Just make sure you have two spoons so that you’re not mixing the batters when you’re scooping it in the pan.
- It’s important to alternate the colors on the bottom so that the marbling effect is consistent. That being said, this does not need to be perfect so don’t worry if one scoop is a little larger than the other.
- For this cake, I started with 1/4 cup of the vanilla batter and plopped it in the bottom of the pan. Then, I took a 1/4 cup of the matcha batter and scooped it on top of the vanilla. Working clockwise or counter-clockwise, proceed the same way, just alternating the order of batters.
- Using the tip of a toothpick or a knife, swirl the batter once you’ve done scooping it into the pan. The pattern should look a little like what is in the photo below.

Baking the Bundt:
- To get a bundt cake that easily slides out of the pan, I like to use a pastry brush and dip it into about half of a tablespoon of butter to make sure the butter goes in every nook and cranny of the bundt pan. If you’re using a smooth bundt pan (the swirled one I use has a lot of grooves in it!), then greasing it will be a bit quicker.
- For some recipes, this one included, I like to sugar the cake pan instead of using flour. It helps the cake come out easier and it helps create a nice crust once baked.
- I used a 6-cup bundt pan in this recipe but if you don’t have a bundt pan you could also use a 10 in. round cake pan and apply the same marbling techniques outlined above.


Marbled Matcha Latte Bundt Cake
Equipment
- 1 6-cup bundt pan
Ingredients
- 1 cup butter, plus 1 tbsp for greasing bundt pan room temp
- 1 cup sugar, plus 1 tsp (for greasing bundt pan)
- 2 eggs room temp
- 1 tsp vanilla extract
- ½ cup milk
- 1 cup flour
- ¾ tsp baking powder
- ¼ tsp salt
- 1 tbsp matcha powder
Instructions
- Preheat oven to 350°. Grease the bundt pan using a pastry brush to ensure all the nooks and crannies of the mold are buttered. Pour a teaspoon of sugar and bang the pan around to ensure the sugar covers all of the pan in a thin layer.
- In a large mixing bowl, cream together the butter with the sugar until it is pale and fluffy (about 3 minutes.
- Add the eggs, vanilla extract and milk to the creamed butter bowl. Mix until incorporated.
- In a separate medium bowl, whisk together flour, baking powder and salt. Scoop half of this mixture into the batter bowl and mix until combined.
- To the leftover flour mixture bowl, sift in the matcha powder. Scoop half of the batter mixture into the matcha bowl and mix.
- Grab the 6-cup greased bundt pan, and using a 1/4 cup measure for each batter, spoon 1/4 cup of the vanilla batter into the pan and then scoop 1/4 cup of the matcha batter on top of that. Continue alternation batters along the bundt pan until no more batter is left. Take a knife or toothpick and swirl the batter around a few times to get some marbling on top.
- Bake in oven for 45-50 minutes (until a knife or toothpick inserted comes out clean).
- Let cool and slice and enjoy!
